Snickerdoodle cupcakes
Yesterday was my wonderful husbands 29th birthday! His favorite cookie is a snickerdoodle, but because we're having a little party on Saturday with another fancy cake (I'll post later) I decided to make his favorite sweet treat with a spin!
Snickerdoodle cupcakes: Makes 24
- 2&3/4 cup all-purpose flour
- 2 tsp ground cinnamon
- 3 tsp baking powder
- 1/2 tsp salt
- 3/4 cup shortening mix
- 1&2/3 cup granulated sugar
- 5 egg whites
- 3&1/4 tsp vanilla
- 1&1/4 cup milk
Cinnamon Frosting
- 4 cups powdered sugar
- 2&1/2 tsp ground cinnamon
- 2/3 cup unsalted butter (softened)
- 1 tbs vanilla
- 4 tbs milk
Heat oven to 350 degrees. Line cupcake tins with paper
In a med bowl mix flour, 2 tsp cinnamon, baking powder and salt; set aside
I a large mixing bowl, beat shortening mix with mixer in medium speed, beat for about 30 seconds. Gradually add 1&2/3 cup sugar in small amounts beating well after each addition and scraping bowl often. After sugar is completely added beat for an additional 2 minutes. Add egg whites, one at a time, beating well after each addition. Add 3&1/4 tsp vanilla, switch to low speed and add small amounts of flour and milk alternating with each other, beating well between each addition. When all ingredients are added, continue mixing until well blended.
Divide batter using about 1/3 cup for each cupcake, or until 2/3rds full.
Bake for 18 to 20 minutes, check with a toothpick in the center of a cupcake to make sure it comes out clean.
Frosting: Mix powdered sugar, butter and 2&1/2 tsp cinnamon with an electric mixer on low. After about a minute add vanilla and milk gradually until well blended and smooth. Frost each cupcake and sprinkle with cinnamon/sugar mixture.
