Bacon Potato Poppers

As you saw with the Burger post these potato poppers on the plate make a delicious side dish and are super easy to prepare!

Bacon Potato Poppers (serves 4)
  • 8 mini potatoes cooked and cut in half
  • 1 tbs left over bacon grease
  • 1 tbs butter
  • 1 tsp minced garlic
  • 1tsp minced onion
  • 1 tbs minced red bell pepper
  • 3/4 cup shredded colby jack cheese (or just enough to cover all potatoes)
  • 3 slices cooked extra crispy bacon
Cook your potatoes in the microwave either in a potato pouch or wrapped in a paper towel for about 3 minutes or until soft. Heat grease and butter in med frying pan and saute onion, pepper and garlic for about 3 to 4 minutes. Before all the butter and grease has cooked off toss in your potatoes and cook for about 3 minutes or until pan is almost dry. Top with cheese and serve with sour cream!
