Shhh.. Hush Puppies!

I have to honest I am not a huge fan of Hush Puppies but when my husband came across a recipe he couldn't resist I caved and made them with him and with a few little adjustments I now find they are irresistible!

Best Ever Hush Puppies! (Makes about 45 Hush Puppies)

Preheat oil in medium deep pot or deep fryer to 350 degrees
  • 1 cup yellow cornmeal
  • 3/4 cup self-rising flour
  • 1 tsp salt
  • 1/2 tsp granulated sugar
  • 1/2 tsp cayenne pepper
  • 1/2 small sweet onion, finely chopped
  • 1/2 jalapeno, finely chopped
  • 4 green onions, sliced thin
  • 1 large egg, beaten
  • 1 cup grated cheddar
  • 1/2 cup (or so) grated Parmesan
  • 1 cup heavy whipping cream
  • 1 tsp bacon grease
Mix all ingredients together in a large bowl, batter will be really stiff and kind of sticky. roll batter by the tablespoonful  into balls (you want them to be bite size) and deep fry for about 3 to 5 minutes or until golden brown. I usually do only 1 ball to start as a test to make sure my oil is heated just right and the size of the ball isn't too big causing it be under done in the middle.
