Crock Pot Pork Chops
I tried this recipe hoping it would be a simple "get outta cooking a big dinner" but with little expectations on flavor. To my surprise Kyle and Ardynn absolutely loved it, actually they inhaled it! Kyle says these chops tasted like beef roast , not sure if you'll feel the same but if you're looking for something easy and savory with minimal effort than this is the recipe for you!
Crockpot Pork Chops

6 boneless pork chops (thick cut 1"- 1 1/2", or for a cheaper meal use the thin cut chops that come in a 6pk for about $8)
1/2 cup light brown sugar, packed
1/2 cup ketchup
1 tbs grainy mustard
1/4 cup low sodium soy sauce
1/2 tsp or so chili powder
1 teaspoon minced garlic
1 teaspoon black pepper
1/2 teaspoon kosher salt
1 can low sodium chicken broth
2 heaping teaspoons corn starch and enough cold water added to create a glue like consistency
Layer ingredients (except corn starch) in slow cooker, stir until mixed well then add the pork and cover. Cook on low 4 to 5 hours. Cooking time will vary depending on your slow cooker, mine cooks really hot even on the low setting so use your best judgment and always remember to test your meat with a good thermometer to make sure the temperature is appropriate.
After the chops are cooked remove desired amount of liquid from the crockpot and put into a small sauce pan. Heat until boiling and add cornstarch mixture until you reach your desired thickness.
