Sweet Barbacoa Pork
It's been a while since I've posted anything new, sorry! I came across a recipe for Sweet Pork similar to Cafe Rio's, which my family loves so we were pretty excited to try it. After a couple of my own tweeks I think I nailed it, at least to our taste. The best part about this recipe is that it's a crock pot set and forget, and it is so versatile! Use the pork for quesadillas, salads, burritos, tacos, or whatever sounds great to you, the way the recipe follows lasts us up to three days, enjoy!
Sweet Barbacoa Pork
In a heavy duty Ziploc bag, add 2 cans coke and 1/4 cup brown sugar. Let sit overnight, I usually make this about 7pm the night before we make the pork.
Drain and discard marinade, place pork chops in slow cooker and add garlic powder, about 3/4 can of coke, and 1/2 cup water or enough to cover the pork. Cook on high for 4 hours.
Remove pork from crock pot and shred, discard remaining liquid from pot and add enchilada sauce, green chilies, 1 cup brown sugar, 1/2 can coke. Cook on low for 2 hours then serve and enjoy!
* I purchase 4 large boneless thick cut (about 2 inches) pork chops from Winco, it's important to make sure the pork isn't too thin otherwise you wont get much out of it, if all you can find is thin cut pork chops buy 8 of them. This meal costs us about $10 bucks because the pork chops are less expensive then a loin, butt or roast.

- 4 boneless pork chops (or whatever kind of pork meat up to 4 lbs)
- 3 and 1/2 cans Vanilla Coke Zero
- 1 and 1/2 cups brown sugar
- 1 jar Kroger Chepotle enchilada sauce (any red medium or chepotle sauce is fine too)
- 1 can diced green chilies
- 1 tsp powdered garlic
- 1 tsp minced dried onion flakes
- 1/2 cup water (or enough to cover the pork after coke is added in the first set of instructions)
