Ingredients:
- 6 to 7 pound pork shoulder (yeah they're spendy but you get a TON of meat!)
- 1/2 packet McCormick Fajita seasoning
- 1/2 packet McCormick Burrito seasoning
- 1 can diced green chilies
- 1 tbs minced garlic
- 1/2 of an orange; juced
- 1 lime; juiced
- Small corn tortillas (or flour if preferred)
- 1 avocado; sliced
- Shredded cabbage
Place your pork shoulder in a crock pot with the fatty side up. In a small bowl mix all the above ingredients together and slather all over the pork. Cook on low for 8 to 10 hours or until pork reaches an internal temp of 200 degrees. Shred meat and place back in crock pot with all the yummy juices and let soak until ready to serve.
Heat the corn tortillas in a small skillet with a little bit of canola oil until lightly browned on both sides. load them up with meat, shredded cheese, avocado, shredded cabbage, salsa, ranch or sour cream, they are even more awesome with the avocado salsa verde found under "apps/sides/dips".
