"Farmer Stacy's" Breakfast Strata
This is the recipe, if you read my post on the Frittata, that I chose to whip up because I thought it would be easier than the glorified omelet Asparagus Frattata. Boy was I wrong, however I am happy I made the decision to try this recipe because it is really scrumptious! I added smoked Gouda, or bacon cheese as we like to call it, to add a more rich flavor to this casserole. I like my ham cubes to be about 3/4 of an inch square and the bread cubes just a tough bigger. This casserole bakes for a long time, 60-70 minutes, not to mention it needs to sit at room temp for 30 minutes prior. As I mention in the directions I always forget to preheat the oven, I hope to help you avoid skipping that step!
Farmer's Strata Breakfast Casserole
In a large skillet, cook bacon over medium heat until nice and crispy; add ham, garlic and onion. Continue cooking until onion in tender, then drain off grease. In a lightly greased 9x13 inch baking dish layer half of the bread cubes, potatoes, and cheese sprinkle with salt and pepper. Top with bacon and ham mixture and repeat layers with remaining ingredients and sprinkle with salt and pepper again.
In a bowl, beat eggs with half and half, Worcestershire, mustard and a dash of fresh ground pepper. Pour egg mixture over ingredients in baking dish. Cover and chill over night.
Remove casserole from the fridge at least 30 minutes prior to baking and remember to preheat oven to 325 degrees (I am always so good at forgetting this step). Bake uncovered for 65-70 minutes or until you can insert a knife in the middle and it comes out clean.
I hope if you take the time needed, which is a lot, to make this delicious casserole that you enjoy it as much as we do. The term "breakfast casserole" is somewhat misleading, it sound easy, after all casseroles were invented to make dinner/breakfast quick and easy. In most cases casseroles are one dish meals, this one certainly takes a lot of work, more than a couple of dishes and some time but is truly worth it!

- 1 small onion, chopped
- 1 loaf of french bread, cut into cubes
- 1 cup cubed cooked potatoes
- 1 1/2 cups smoked Gouda cheese, cut into small cubes
- 3 cups shredded cheddar cheese
- 8 eggs
- 3 cups half and half
- 1 tbs Worcestershire sauce
- 1 teaspoon ground or dijon mustard
- 1 tsp minced garlic
- salt and pepper to taste
