Pineapple Freezer Pops

Ever pick up a pineapple, take it home, chop it up only to find half of it going bad in the back of your fridge? Or Keep getting them week after week from Bountiful Baskets? Here is a recipe for a cool sweet treat that the kiddos will love!

Pineapple Freezer Pops
  • 1 pineapple, chopped with the tough core
  • 1 pkt stevia
  • 1 cup vanilla soy milk (or regular milk)
  • 1/2 tsp vanilla extract
Put the chopped pineapple in a food processor and chop until smooth with some chunks. Add to a blender with all remaining ingredients and blend until well mixed. Pour into freezer pop trays, if you have them, if not ice cube trays will do the trick. When cubes are frozen, after a few hours or a day, pop them into a freezer baggie and they will keep for 6 months. I don't have freezer pop trays so I take 3 cubes and smash them in a baggie with a meat pounder and mix with Greek honey yogurt, it tastes just like ice cream but far healthier, Ardynn loves it!!
