White Bean Chicken Chili
White Bean Chicken Chili makes a delicious meal full of spicy chili flavor, chicken, and white beans. This recipe is a simple and delicious take on chili that even your kids will love!

Ingredients
- 2 tablespoons olive oil
- 1 yellow onion, diced
- 1 teaspoon garlic, minced
- 1 can (14.5 ounces) chicken broth
- 1 jar (18.75 ounces) Salsa Verde
- 1 can (15.25 ounces) sweet corn, drained
- 2 cans (16 ounces) diced fire roasted tomatoes undrained (petite if available)
- ½ teaspoon dried oregano
- 1 pound rotisserie chicken, shredded (about 2 heaping cups)
- 2 cans (15 ounces) white beans, undrained
- 1 can (15 ounces) black beans, undrained
- 2 tbs sour cream
- 1/2 cup mexican blend cheese
- 1 medium jalapeno diced, for garnish
- fresh cilantro, chopped, for garnish
- Instructions
- Heat oil over medium heat in a dutch oven or large pot. Add onion and cook for about 5-7 minutes, or until translucent.
- Add garlic and cook for 1 minute.
- Stir in broth, salsa verde, corn, tomatoes, beans and oregano.
- Bring the mixture to a boil. Reduce the heat to low and allow to simmer for 10 minutes.
- Add shredded chicken, sour cream, 1 tsp cilantro and cheese. Continue to simmer for 5-10 minutes.
- Garnish with chopped jalapeno and cilantro.
