Split Pea and Ham Soup

  • Ingredients:

  • 1 pound dried split peas
  • 5 cups water
  • 1 pound diced ham
  • 5 cups chicken stock
  • 1 1/2 cups chopped carrot
  • 1 cup chopped celery
  • 2 potatoes, peeled and chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 2 bay leaves
  • 1 onion, chopped
  • Salt and pepper to taste

Directions:

  1. Place all ingredients in a large stock pot, bring to a boil then reduce heat and simmer for 3 to 4 hours stirring occasionally. When split peas are soft and right before serving use an immersion blender and blend until desired personal texture is achieved. I prefer some of the potatoes and ham to remain chunky.
