Split Pea and Ham Soup
- Ingredients:
- 1 pound dried split peas
- 5 cups water
- 1 pound diced ham
- 5 cups chicken stock
- 1 1/2 cups chopped carrot
- 1 cup chopped celery
- 2 potatoes, peeled and chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 2 bay leaves
- 1 onion, chopped
- Salt and pepper to taste
Directions:
- Place all ingredients in a large stock pot, bring to a boil then reduce heat and simmer for 3 to 4 hours stirring occasionally. When split peas are soft and right before serving use an immersion blender and blend until desired personal texture is achieved. I prefer some of the potatoes and ham to remain chunky.
